A hard-edged object like a box has a clear boundary. Every pixel is either fully inside or fully outside. Hair is different. Each strand is thinner than a pixel at the edges. The transition from subject to background is gradual, not abrupt.
The AI model has to decide, for each pixel, how much of it belongs to the subject. That is called alpha matting. It is a harder problem than binary segmentation, and it is where most background removal tools struggle.
The result is a cutout with a hard edge that looks like a sticker. On a portrait, the hair looks like a helmet. On a pet, the fur looks like a plush toy. The rest of the image is fine, but the edge gives it away.
